Tasty Tuesday: One Skillet Giambotte (Italian Sausage, Chicken & Potatoes)

When I was cooking one of my favorite recipes this morning before work, giambotte, I realized it would be a great quick and easy recipe to share here since I haven’t done that in a while. This dish is so simple – but the flavors mix perfectly into something delicious. And like many of my favorite recipes, it’s easy to customize to your family’s taste.

The last couple times we’ve made this recipe, I’ve prepared it in the morning so that the mixture can sit all day, making it even more flavorful by dinner time. Plus it means there’s no time to be spent on dinner prep during the busy evening hours!

Here’s the quick and easy how-to:

First, brown a pound of ground Italian sausage in a skillet. Then set aside. (I forgot to take a picture of the browning, but everyone knows how to brown meat, right? Here’s mine after I’d set it aside.)

Using the same skillet (I love that I use the same skillet for this entire recipe – less mess & tastier!), heat a bit of olive oil and then brown around a pound of diced chicken, seasoned with salt & pepper. I used a little less today because it happened to be a smaller package, but the chicken isn’t really the dominant flavor in this dish anyway.

Remove the chicken and add more olive oil. Add diced potatoes and onions to the skillet. I used about 4 large potatoes and one large onion. Season the vegetables with salt, pepper and Italian seasoning.

I brown the potatoes on medium heat for about 5 minutes, then turn the heat down to low and put on the lid and let them cook for about 45 minutes, stirring every 10 minutes or so. The potatoes should end up fairly mushy so that everything mixes well. Add the meat back in and stir it all up. You can let it sit for a few minutes and dig in or save it for later. As I said, I’ve been preparing it in the morning and then re-heating in the oven for dinner.

This is such a simple and tasty dinner – the recipe I’m including here makes a pretty substantial amount, but it’s for our family of five, plus enough for leftovers because it tastes even better the next day!

One Skillet Giambotte (Italian Sausage, Chicken & Potatoes)

1 lb. ground Italian sausage

1 lb. diced chicken

4 large potatoes, diced into small cubes

1 large onion, diced

4 tablespoons olive oil (approximately)

Salt, pepper and Italian seasoning to taste.

 

1. Brown sausage and set aside.

2. Using the same skillet, heat olive oil and then brown chicken, seasoned with salt and pepper.

3. Remove chicken from skillet and heat more olive oil.

4. Add diced potatoes, onions, and seasonings to skillet. Brown on medium heat for 5 minutes, then turn heat to low, cover and cook for additional 45 minutes, stirring 3 to 4 times.

5. Return meat to mixture and combine.
